We’ll start off with this raw spiralized salad. It’s loaded with health-boosting veggies. And, it’s incredibly delicious.

You will use cucumber, which is high in vitamins and minerals, spiralized with delicious daikon. Daikon is known for its amazing benefits such as cancer prevention, stronger immune system, lower inflammation, and improved digestion. Sounds good right! Then you’ll combine these two veggies with some sliced bell pepper, shredded carrots, and bamboo shoots.

To really get that Thai flavour Rebecca adds coconut vinegar, coconut, cilantro, and of course some coriander and refrigerates to allow the salad marinate for optimal taste. This simple recipe can be whipped up in minutes.

This Aztec Corn Salad is simple and easy to make. Makes a perfect healthy lunch. Contains a decent amount of protein. Plus there’s plenty of fiber in there too. As a result, this salad will keep you full throughout the afternoon.
 
What’s more, is it’s super quick to make. All you’ll need some black beans, quinoa, and corn.  
 
Using some gluten-free quinoa as the base makes this salad loaded with minerals. What a delicious way to get in some magnesium, iron, potassium, calcium and phosphorus. And, there’s plenty of vitamins in there too. Such as those all essential B vitamins. And vitamin E. Plus some beneficial antioxidants too.
 
This is all before you add the super healthy and tasty black beans. Another nutrient-dense plant food that’s super filling and contains plenty of magnesium.
